Olive Cheese Bread

The bonus recipe for April’s menu was PW’s Olive Cheese Bread.  I’ve made this one before, so I knew enough to look forward to it.  Unfortunately (or fortunately, depending on how you look at it), Phillip doesn’t do olives, so this recipe was just for me.

The recipe calls for green stuffed olives and black pitted olives.

PW chopped hers with a knife, but I just ran mine through my mini chopper. Extra easy and no wayward olives on my floor.

Add some chopped green onion, mayonnaise, butter, and monterey jack cheese.  Stir to combine – and that’s it.  Olive mixture ready to go.Spread some of the mixture on French bread and bake in the oven for about 20 minutes.The finished product:

A very rich, but delicious, mix.  Definitely be conservative when spreading this as it packs a lot of flavor into a little space – use the leftovers for a dip!  This also makes more than enough for a crowd and would be perfect for making a lot of small appetizers.  I just need to find some more people that like olives.

BIG Week

Settle in – this one’s long.  The past seven days have been extremely eventful for the Deans.  Big things happening around here!

Last weekend, Phillip and I headed to Charleston to begin our house hunt.  Always looking for an efficiency, Phillip also scheduled his interview for his South Carolina medical license.  Unfortunately, he scheduled it for 4:45 on Friday afternoon.  Normally, this wouldn’t be a problem (we can easily be morning people that get up and hit the road), but Phillip is working nights this month so he wouldn’t get off work until 8:00 a.m. that day, and wouldn’t be showered or well-rested.  Not ideal conditions for an interview.  Plus, it was an estimated 8 hour drive from Birmingham to Charleston and, with the time change, we were set to lose an hour.  All in all, I didn’t see how we could possibly make it on time.  But luck was on our side – Phillip’s attending agreed to round early so he was able to make it home in time to grab a quick shower and leave around 7:00.  Of course, since Phillip had worked all night, he needed to sleep.  So the driving fell to me.  Ugh, I hate to drive.  And I get so restless on long trips.  And it’s even worse when my car buddy is asleep the entire time.  But, it had to be done.  We set out, made excellent time, and even had time for a couple of quick stops.  We made it in time to check into our hotel and regroup before heading to Phillip’s interview.  The interview itself was..uhm, interesting…to say the least.  After getting that behind us, we enjoyed a great meal at Hominy Grill, which is on its way to being one of my favorite restaurants (the pudding is amazing!).

The next day we spent hours driving around looking at houses with our excellent agent, Jason.  We got a good feel for several neighborhoods and even put a couple of homes in our sights.  It was a very productive day.  After ending our real estate tour, Phillip suggested that we drive out to the coast.  We dipped our toes in the ocean, and then journeyed to Fort Moutrie for a little sight-seeing.

That night we enjoyed some delicious, award-winning mojitos at Coast before turning in after our long day.

On Sunday, we headed back to Alabama and timed our arrival just as our open house ended.  There had also been a scheduled showing earlier that morning so we hoped there had been some good traffic that day.

On Monday, Phillip slept off his Sunday night shift while I survived a typical Monday at work.  One perk though -a friend of ours put out a request for a washing machine donation for a non-profit organization.  Score!  We’ve been trying to find a good home for our extra washer and dryer for months and are delighted to have the opportunity to donate it to someone who can really use it.  Beginning to look like things are falling into place…

On Monday night, we were delighted to get an offer on our house!  Thank goodness!  We had been so worried that it would take it several more months to sell.  We negotiated with the prospective purchaser (who, as it turns out, was the Sunday morning scheduled showing) and reached a final agreement on Tuesday.  Of course, the inspection and all of the other typical contingencies are still pending, but we’re hoping it sticks!  Best of all, the purchaser doesn’t want to close until late June – we couldn’t have planned it any more perfectly to align with our South Carolina timeline.  Again, things seem to be falling into place.

Compared to the previous few days, Wednesday was relatively uneventful.  Thursday we were excited to receive the link to our wedding highlights video with a promise that the full video would be arriving in the mail on Saturday.  Check out the amazing job John and Angela from Main Street Productions did here:  Phillip and Jennifer

Friday was another big day.  Bar results were due to be released.  I knew what time they would be posted, so I was able to be intensely anxious about it all day.  But, I PASSED.  It was such a relief.  A bar exam is a big hurdle no matter how you do it, but the stress of the whole thing was compounded by the fact that I was working full time while trying to prepare for the exam, and oh yeah, my future employment and all of our other Charleston plans kind of depended on my passing the bar.  So, needless to say, I was extremely relieved when I saw my name on the pass list.  So much to be grateful for this week!

On Saturday, not only did the full wedding video arrive (it’s completely awesome, by the way), but I also got to see Mom and Grandmother.  They came down for the afternoon to see South Pacific, the final show of the season for Broadway in Birmingham.  It was a great show – the cast was very talented and it was a very smooth production.  We all thoroughly enjoyed it and I had a hard time choosing between “I’m Gonna Wash That Man Right Outta My Hair” and “Honey Bun” to sing in my head for the rest of the day.  The show also distracted me from worrying about the home inspection which was happening while we were enjoying the show.  : )

On Sunday, as you can imagine, Phillip and I needed a low-key day.  And a low-key day it was.  We did our weekly chores, read, watched a couple of movies, and enjoyed staying put.  It’s always a wonderful feeling knowing that at least most of your day is yours to do with what you will.  And that’s how we came to have cake for breakfast.

We are excited that things are definitely lining up to smooth our transition to Charleston.  I can’t believe what a wonderfully full week it turned out to be – weeks like this remind us of how overwhelmingly blessed we are.

“Spicy” Dr. Pepper Pulled Pork

What better to serve with a cool pasta salad, than a spicy pulled pork?  This recipe has popped up all over the PW world, including the cookbook, the blog, and Food Network, so I was excited to try it.  First, the ingredients:

I found the chipotle peppers in the international foods aisle, but did not find the exact size can the recipe called for.  But, since these peppers and sauce are so spicy and the recipe noted how spicy the pork turns out, I figured I would be okay with a slightly smaller can.  The recipe also calls for 24 ounces of Dr. Pepper.  Neither of us care for Dr. Pepper, so we went the “cooler at the checkout” route and took home a 20 oz.  That should be good enough, right?  The pork shoulder was supposed to cook in the oven for about 6 hours, but I needed this to be a weeknight meal.  So, I pulled out my trusty crockpot to do all the work for me.  First, I quartered a couple of onions and scattered them on the bottom of the crockpot.

Seasoned the pork:

Salt, pepper, and some brown sugar.

Dump in the peppers and adobo sauce.

I didn’t have quite enough liquid from my 20 oz. Dr. Pepper, so I also added a partial can of Coke, which we do like and keep on hand.Several hours later…

The pork turned out extremely moist and very tender, only disappointingly mild-flavored.  I’m not sure if it was the cooking method or some of the (what I thought were) minor ingredient adjustments.  I was expecting big, spicy flavor, but ended up with neither.  However, I did get some very versatile pork.  Phillip ate it plain, I made it into nachos, and we could have made sandwiches or tacos.  And, it made plenty, so there were lots of leftovers – a big return for very little work.  I think this also would have been delicious instead of or mixed with the chicken for the White Chicken Enchiladas.  Next time, I’ll go heavier on the seasoning and definitely spring for an extra can of chipotles.  And I’ll probably just stick to good ol’ Coke – no offense Pioneer Woman, but it’s the Dean way.

Pasta Salad with Tomatoes, Zucchini, and Feta

Next up on the April Sweet as Pie list was Pasta Salad with Tomatoes, Zucchini, and Feta.  Super.  Easy.  This came together so quickly that I barely have photos.

Grape tomatoes, zucchini, and feta cheese.

Throw all of the vegetables into a bowl of bowtie pasta.

Finally, add an entire container of feta cheese, some oil, some fresh lemon juice, and salt and pepper.  This is a good base recipe.  I love the lemon, but if I make it again I’ll switch out the vegetables and step up the seasonings.  I like zucchini, but I’m not wild about it raw, so I think I’d definitely substitute cucumber for an even fresher taste.  As far as seasoning goes, I think this would benefit from a little more flavorful blend, including some garlic.  And the parsley.  In my opinion, parsley is only slightly better than useless.  If it weren’t green and offered a pop of color, it would be completely useless.  Maybe my palette just doesn’t respond well to parsley.  Anyway, my recommendation would be to skip the parsley and go with fresh basil.  Oh, oh, and maybe some of those tiny mozzarella balls (which are apparently called bocconcini)!  See, like I said, a good base recipe.

Breakfast Bowls

On Sunday, I was feeling unusually breakfast-y, and I stood in front of the open fridge for a few minutes before realizing I had all the ingredients to make breakfast bowls, a PW recipe from her first cookbook that I’d been meaning to try.  And, even better, it helped me clear some bits and pieces of leftovers from my shelves! 

Basically, you make an omelet without having to make an omelet (and if you’re me, without having to eat any eggs).  Brilliant!  First, I used some more of the hashbrowns I bought for the PW Breakfast Burritos.

I threw a diced onion and some leftover corn in with my hashbrowns.

The last of a pack of bacon and half a pound of leftover hot sausage.

I also opened a can of fire roasted diced tomatoes, but fresh tomatoes or salsa would work well too.

At one point you can pour in a beaten egg (if you go for that sort of thing), but these are perfectly yummy egg-free.  After you’ve built your bowl, it goes in the oven for 10-15 minutes.

These were super easy to make, tasty, and customizable.  And, they have the added bonus of being able to be prepped ahead of time, or put together as late-sleepers wander into the kitchen.  I’ll definitely keep this one in mind for weekends!

White Chicken Enchiladas

It’s the middle of April and I’m just now starting on my Sweet as Pie recipes for the month!  I best get cooking!  First up – White Chicken Enchiladas.  Y’all.  These were delicious.  You should make them.  Here’s how they came together:

First, the recipe directed me to grill my peppers until charred all over, and then transfer them to a plastic bag to steam for about 30 minutes.  The steaming really worked – the charred skin peeled right off and the peppers had lost their crunch, which is a good thing in this dish.

I attempted to grill my one bell pepper (instead of the tri-color trio the recipe called for) and my serrano chiles on my grill pan. It was SLOW going.

I’d cooked the chicken that morning, so I saved some prep time with that.  This would be a great recipe for using up any leftover chicken you have in your fridge since there’s really not a magic seasoning blend the chicken takes on.  While the saute was going, I worked on the peppers.

In goes the chicken and half of the grilled peppers.

Mixed in some chicken broth and a PW signature ingredient, cream.

While the chicken simmered, I worked on the creamy cheese sauce.

A basic roux with some more chicken broth and cream, and a hefty couple of handfuls of monterey jack cheese. Oh, and the other half of the grilled peppers.

The recipe makes a lot of enchiladas.  I used the small taco-sized tortillas and there were enough to fill a 9×13 dish, as well as another small casserole dish.  Leftovers!After assembling the enchiladas, I poured on the sauce.

Honestly, this sauce would make a great cheese dip for chips. You could skip this whole enchilada business entirely.

Four hungry boys can’t be wrong – these were yummy.  The sauce is very creamy and really makes it all work.  Next time I might try to cut down on some of the prep time by skipping the pepper roasting process and using canned chiles, but otherwise this one doesn’t need much tweaking to suit our tastes.  We’ll definitely make them again.  Another Sweet as Pie success story!

And the Boys Played On

This weekend Phillip’s brother, Ben, drove down from Charlotte for a visit.  Cue guy-time.  Phillip and Ben convinced (not that it was all that hard) their friends Bobby and Scott to come over on Friday night to indulge in one of the guys’ favorite pastimes, just like old times when they all lived in Tuscaloosa.  And that’s how I ended up watching four boys play frisbee golf and Super Smash Brothers on Playstation and Wii for hours.  It’s fun to be a spectator for that sort of thing though – they are so funny when they get together.

Things can get pretty intense when those frisbees are flying.

And everything is right with the world.

They played on until well after midnight, long after I’d retired for the evening (because, as you all know, I haven’t been “midnight cool” in years – okay, maybe never).  On Saturday, Phillip tried to catch up on his sleep while I caught up with Ben.  Bobby came over in the afternoon and Phillip convinced the guys to help him with a little yardwork.

It was a beautiful afternoon, so the boys decided to break in Phillip’s bocce ball set at Crestline Park.  I tagged along as the fourth “man”, and we all enjoyed several rounds of bocce in the park.

Later that afternoon the boys relived part of their childhood by watching The Adventures of Tin Tin, which Phillip had been saving for this particular occasion.  It was a cute movie and it was amazing how many details Phillip and Ben remembered from the old cartoon series.  Scott showed back up shortly after the movie ended (despite his very busy med school hospital rotation schedule in Tuscaloosa) and they broke out into frisbee golf once more.  Long live male bonding.  And the wives that support such things.

PW in BHM

Last night we (me and some fellow Sweet as Pie members) were excited to meet The Pioneer Woman when she stopped at Books-A-Million in Birmingham.  Jenny was kind enough to score us a line number the night before so we were in the second wave of the more than 200 numbers (at up to 5 people per number).  PW started with a slideshow about who she is, what she does, and how it all got started.

After snaking through a poorly planned line (Mom would have had this place whipped into shape), it was finally our turn.  Ree was so nice and friendly!  Especially for having signed hundreds of books already and taken many, many pictures.  I gave her a printout from our cooking club website to read later and told her a little bit about it.  She personalized all of our books and posed for a picture with each of us.

Apparently, I was having space issues.

Then she was nice enough to let us get a group shot.

It was so much fun to catch up with some of my cooking club friends, and a thrill to meet Ree in person!  We love you P-Dub!

The Big 2-9

That’s right, folks, today is Phillip’s 29th birthday (no joke).  Cheers and balloons and birthday cake all around!  We’ve actually been celebrating for a couple of days now.  We started on Friday night with reservations at Highlands Bar and Grill, the fanciest restaurant in Birmingham.  We enjoyed the signature dish, baked grits, for an appetizer, then cadillac fish (Phillip) and pork loin (me) for entrees.  Honestly, we found the place to be a little over-hyped and have had much more complete dining experiences at other restaurants in Birmingham.  Except for the desserts.  The desserts were AMAZING.  Phillip had Frank’s Favorite Cake which was a light layer cake with an Italian meringue topping.  I had a chocolate pecan tort with homemade Jack Daniels ice cream and fresh whipped cream.  But the best part was the caramel.  You just had to be there.  Sorry there are no pictures – I didn’t even take the camera.  Trying to keep it classy, folks.

On Saturday, I made Phillip the PW Breakfast Burritos.  We met our friend Catherine for a delicious lunch at Olexa’s.  When we got home, Phillip couldn’t wait until his actual birthday to rip open his present.

He is a total tech gadget person, so he was super excited to finally get the “Jennifer can’t even begin to appreciate how cool this is” new router he’s been coveting for months. So while he got it all set up, I worked on his birthday cupcakes.  I attempted to make the red velvet cupcakes from Jan Moon’s (Dreamcakes) cupcake cookbook.  Jan did our wedding cakes so I knew this recipe would be a winner.

Unfortunately, somewhere along the way, I made some sort of mistake and ended up with half normal looking cupcakes and half cupcake-craters.  But both were delicious!  And the cream cheese icing filled in the craters nicely. : )

And for supper last night, I attempted shrimp and grits (or scallops if you’re Phillip) using recipes from The Hominy Grill which I visited in Charleston last month.  I should have cooked my grits a little longer, but the dish was very good.  We’ll definitely be making it again – easy and yummy.

Today was the big day.  2-9.  Phillip feels the same about this birthday as I do – we’re thinking it will be the last one we choose to officially recognize.  We’re just going to stay in our twenties forever.  Fact.  We’ve enjoyed a nice day together – went to church for the Palm Sunday service, got caught up on last season’s episodes of Game of Thrones, went for a walk and a wade in Shades Creek, and enjoyed some leftovers for dinner.  The downside to this birthday has, of course, been the looming month of night float Phillip starts tonight.  Regardless of any ol’ stupid night float, we’re still happy to be celebrating Phillip today!

PW Breakfast Burritos

Just under the wire!  For the last Sweet as Pie recipe for March, I whipped up some breakfast burritos.  It actually worked out perfectly since Phillip loves breakfast and this is his official birthday weekend (his actual birthday is tomorrow).  Of course, when I went to the grocery store last Sunday I forgot to get all of the things for the burritos so I made a quick run to Publix this morning.  Let me just say for the record that I LOVE Publix.  And I especially love it before 8:00 a.m. when there are few people and there are Publix employees stocking shelves in every aisle who always say good morning.  Anyway, back to breakfast.  The recipe makes what seems like, appropriately, a cowboy-size number of servings, so we cut it in half.  5 eggs > 10 eggs, in my book.  I started with some hot sausage (Phillip’s preference):

The recipe called for PW’s own breakfast potatoes, but I cheated and used frozen southern-style hashbrowns. 

Then, the aforementioned eggs, as well as some seasonings and cheese.  We used pepper jack for a little something extra.

I actually had to turn up the heat on this because the eggs just weren't cooking. And it didn't end up looking anything like PW's pictures in her cookbook. Oh well.

We served them with some salsa for dipping – a must for these burritos.These were really pretty simple to make and I think would be a great option for a traveling or vacationing weekend.  Phillip is excited to see if they reheat well since despite halving the recipe, it still made 8 burritos.  Next time I’ll adjust the seasonings, maybe add some onions and mushrooms for me, and maybe change the cooking method a bit so the eggs scramble a bit better.  And, I might try to do separate shredded hashbrowns so there’s a little crispness in the burrito.  The possibilities are nearly endless!  Happy birthday breakfast, Phillip!
