Life Lessons from My Mom

“Raccoons don’t eat french fries and cats don’t eat ham.”

No, there’s no metaphor to this one (not intended anyway).  Just the facts of life from my mom reflecting what she’d learned this week.  Isn’t she wonderful?  Keep her in your thoughts – she’s been working insane hours (more than Phillip) for weeks, which is why she ran out of cat food and tried to feed them ham.

Chocolate Mint Brownie Bites

There are TWO desserts on the August Sweet as Pie list – Bananas Foster and Chocolate Mint Brownie Bites.  We’re saving the Bananas Foster until the end, so this week we (and by “we” I mean “I”) whipped up the Chocolate Mint Brownie Bites.  Here’s how they came together:

First, I melted some unsweetened chocolate and a few Andes mints together.

Phillip is pretty sure I’m the only person that ever lived that doesn’t like Andes mints.  I just don’t care for them.  Never have.  It usually works out fine for everyone else though because whenever I end up with an Andes mint (like at a restaurant), some lucky friend or family member gets an extra.  So I knew from the outset that these brownies would be mostly for Phillip.  Anyway, back to the brownies.

Next, I creamed some butter and sugar together, added some eggs, and then drizzled in the chocolate/mint mixture.

At this point, I added some additional mint extract.  Well, peppermint extract.  I don’t know if they make regular mint extract, but if they do, my Publix didn’t have it and I figured I could actually use peppermint extract this winter for a variety of treats.Then, I added some flour to the batter and mixed well.  I portioned out the mixture into a greased mini-muffin pan.  I had some leftover batter so I also made two regular sized cupcake brownies.After a quick trip to the oven:While the brownies cooled on the counter, I melted a bunch of Andes, some semi-sweet chocolate, and some butter together to make the coating.

Not the prettiest, but they probably could have been if I’d tried a little harder. : )

As I said, I’m not a fan of chocolate mints, but nonetheless these were pretty good – I think I liked them better without the topping.  Phillip, however, loves chocolate mints and so of course loved these.  I think I ate 2 or 3 during the week, so he polished off the rest.  They kept pretty well in a covered container all week.  If you’re a fan of chocolate and mint, these will probably be a hit!

Corn Casserole with Peppers

This was the bonus recipe for August and I was really looking forward to it since there is so much fresh corn to be had this time of year.  This was extremely easy to make and was extremely delicious too.  Here’s how it came together:

I started by cutting the kernels from 8 cobs of corn.  Make sure you have a sharp knife for this part – it makes it a lot easier.  While you have your knife out, dice a red bell pepper and a couple of jalapenos.  Leave the jalapeno seeds and ribs in if you want some spice in this.  I left one of the peppers’ seeds in and it was plenty hot for me (Phillip didn’t even notice).  Then I added salt, pepper, butter, heavy cream, and some milk.  The only thing left was to bake it.  See, I told you it was really easy.

While the corn was baking and smelling yummy, I grilled some pork chops.  These are our favorite pork chops – 1-1.5 inch thick boneless pork loin chops sprinkled with Conecuh seasoning.  Grill them for 8 minutes on each side for perfectly juicy chops.  And then the corn was done!

The sauce was pretty thin, but I think that was my fault for being impatient to take it out of the oven.

 

Easy weeknight meal.

I probably should have let this cook a little longer, but it smelled amazing and I was hungry.  Despite the heavy cream, this dish was really light.  The flavor of the fresh corn came through and the peppers were a nice accent.  I ate it all week long since it reheated nicely.  I’ll definitely be making this again and even trying it during the winter months with frozen corn.  Make this one soon!

Spinach & Mushroom Quesadillas

For our first selection from this month’s Sweet as Pie list, we made Spinach and Mushroom Quesadillas (chosen by Ellen at Sweet and Savory Snacks who got married last weekend – congrats Ellen!).  We both love mushrooms, we both love goat cheese, and Phillip has recently decided that he prefers spinach to lettuce, so we were pretty sure this was going to be a success for us.  It’s not often we go vegetarian around here, but it was a nice change to our chicken, beef, pork, fish weekly rotation.  Here’s how it came together:

Start out by melting some butter in your skillet.

Sauteing the mushrooms with salt, pepper, and either some sherry or some white wine. We went with wine this time around.  I used plain white mushrooms, but next time I think I’ll sub in baby bellas – so much more flavorful.

My mushrooms were very liquidy – it took them a while to reduce and I still ended up removing them with a slotted spoon and pouring off the excess liquid.

After the mushrooms were finished, I wilted the spinach and lightly seasoned it with salt and pepper.

Then came assembly.  The recipe called for fontina cheese, but we substituted monterey jack and layered it with the mushrooms and spinach before dotting the top with goat cheese.  The whole thing is of course sandwiched between two tortillas.

I used the grill pan to heat these because it was already sitting out. Next time I’ll use a regular skillet for more even browning.

These were very easy and we both enjoyed them.  I think I should have seasoned the spinach a little better, but Phillip probably didn’t notice.  Since there were only the two of us, we had leftover ingredients which I mixed and matched with later in the week for lunch quesadillas.  Worked out great!  Super easy weeknight meal.

2012 Olympic Games

We are obsessed with the Olympics.  We’ve been watching them together since 2008 and try to cram in as much international athletic competition as possible during each cycle.  Ben, my brother-in-law, made an interesting observation that for our generation at least, it’s possible that we’re so invested in the Olympics because the Olympics were so close to us in Atlanta when we were just the right age to be impressed upon.  I totally agree.  It’s easy to trace the Olympic excitement back to the 1996 Atlanta Games (although I do remember my mom letting me stay up late to watch Kristy Yamaguchi win women’s figure skating gold at the 1992 Winter Olympics).  It’s fascinating how things as simple as that can impact a person.

Anyway, despite NBC’s best efforts to thwart our online viewing, I think we’ve seen more of the 2012 London Games than any other.  I love seeing all the different sports, the different cultures, the athletes’ personal stories, and of course, cheering on all of of the U.S. competitors.  My favorite sports to watch are probably gymnastics, swimming, diving, and beach volleyball, but this time I’ve really tried to catch a little bit of everything.  Here’s what I’ve seen so far:

  • Water polo (I think this has to be the absolute hardest game to play)

  • Handball
  • Judo (this was new to me this year – fascinating!)

Hello Kenslee – A 6th Birthday Party

It’s hard to believe that Kenslee is six!  And will be in first grade this year!  But, whether I have a hard time believing it or not, it’s true and I have the pictures to prove it.  Well, the birthday part at least.  Her actual birthday was last Friday, but her Hello Kitty-themed birthday party was on Saturday afternoon at our church in Rogersville.  There was plenty of space for the featured guest – a bouncy house.  The kids had so much fun and I think the adults did too.  Here are some scenes – if you have an aversion to the color pink and/or zebra print, you may want to skip this part:

Our House – August 5, 2012

People, we have concrete!

The garage floor has also been poured.  Next, they will be finishing up the foundation and then moving on to framing!  I’m a little excited about it – can you tell?

In other news, we’ve picked out our granite and are currently working on picking an exterior paint color and the style of our interior doors.  Moving right along!

How Do You Say Edisto?

A few weekends ago, some of our new friends in Charleston invited us out for a casual evening on Edisto Island.  And yes, we definitely did ask them for the proper pronunciation.  Turns out it’s NOT “eh-DIST-oh”, but “EDD-is-toh”.  Another new thing we’ve learned.  The scene was just gorgeous, but I’ll let the pictures try to do the talking.

Phillip tried his hand at shrimping.  He didn’t catch any, but his form wasn’t bad (apparently).That evening we grilled out and just sat around and got to know each other better.  It was a lot of fun and we hope we’re able to do it again soon.  Yet another fun thing about our new city!

Peach Whiskey Barbecue Chicken

This is another Pioneer Woman recipe that Phillip and I like, although it hasn’t been a Sweet as Pie pick (yet).  It’s easy to throw together and is great leftover.  Her’s how it came together:

After browning some chicken thighs, I sauteed some onion.

Like you’ve never seen a picture of a diced onion being sauteed.

Then you add a cup and a half of whiskey to the mix.  To this I added barbecue sauce, peach preserves, Worcestershire, and garlic before adding the chicken back to the pot.  After a trip to the oven for a couple of hours, the finished product:We like to serve this one with creamy mashed potatoes since the sauce is so yummy.The chicken is really tender and the sweetness of the peaches and distinct flavor of the whiskey makes for a really delicious and balanced dish.  You may not be likely to have any “extra” whiskey sitting around, but in case you do, try this one out.  It’s worth it.

A Trip Down the Blue Ridge

While we were en route to Gabe’s wedding in Virginia we discovered that we weren’t all that far from the Blue Ridge Parkway – a road we’ve been trying to drive on for years, but invariably when it has been closed due to winter road conditions.  But ice and snow are no match for July!  On Sunday, we took took a slight detour and hit the parkway, albeit for just a few miles.  Check out the views:

Y’all know I love to take pictures of bridges. Well, you might not know that, but I do. I love the lines.

This overlook/picnic area had a building you could go in to get a nearly 360-degree view.

This was a great way to spend the day – since we were a little higher in elevation, the air was cool and we rode with the windows down.  We had such a good time that we’re planning a whole weekend on the parkway.  Let us know if you have any favorite parts we should try to hit!
