Peach Whiskey Barbecue Chicken

This is another Pioneer Woman recipe that Phillip and I like, although it hasn’t been a Sweet as Pie pick (yet).  It’s easy to throw together and is great leftover.  Her’s how it came together:

After browning some chicken thighs, I sauteed some onion.

Like you’ve never seen a picture of a diced onion being sauteed.

Then you add a cup and a half of whiskey to the mix.  To this I added barbecue sauce, peach preserves, Worcestershire, and garlic before adding the chicken back to the pot.  After a trip to the oven for a couple of hours, the finished product:We like to serve this one with creamy mashed potatoes since the sauce is so yummy.The chicken is really tender and the sweetness of the peaches and distinct flavor of the whiskey makes for a really delicious and balanced dish.  You may not be likely to have any “extra” whiskey sitting around, but in case you do, try this one out.  It’s worth it.
