Hot Fudge Pie

For this month’s dessert selection, Sweet as Pie offered a Hot Fudge Pie.  This was a nice chocolate dessert that we enjoyed with frozen yogurt all week.  It was easy enough to pull together, and was more like actual baking than some other simple chocolate desserts we’ve tried (Phillip doesn’t really care about this aspect, but sometimes I prefer the challenge of accurate measurements over can-dumping).  Here’s how it came together:

First I melted the chocolate and some butter together in the microwave.JBD_7272

While that cooled a bit, I mixed sugar into beaten eggs.JBD_7269

Then I stirred in the chocolate butter, vanilla, and milk.JBD_7275

Finally, I added the flour and poured the batter into a pie plate.JBD_7279 JBD_7282I baked it for about 25 minutes and then served it warm with vanilla frozen yogurt.JBD_7284 JBD_7287

Mine must have baked a little too long because it was not nearly as fudge-y as I thought it would be.  It was still pretty yummy and by no means a miss.  For my money though, I think I’ll stick to my usual Chocolate Cobbler recipe – I like the half cake, half chocolately, syrupy goodness that results more than the brownie-like texture this recipe gave me.

Our New Addition

Meet the newest addition to the Dean household – Roger, our robot vacuum!JBD_7290

You probably wouldn’t believe how excited I was when Roger came to live with us.  He vacuums while I’m working or cooking or doing laundry.  He’s not any louder than a regular vacuum and he rarely gets in a situation he can’t handle (the cell phone charger cord is his nemesis).  He goes under the couch and under the beds and hugs the baseboards in the kitchen.  And he’s fascinating to watch.  Basically, he’s awesome.

Our Charleston Checklist

Last weekend, Phillip and I enjoyed a Friday night reservation at FIG, a great restaurant downtown.  We’d heard so many good things about it that we had to check it out for ourselves.  It did not disappoint.  It easily made our top five Charleston dining experiences.  Phillip had fish, I had steak, and we shared a side of broccoli (which was amazing).  We loved our entrees so much we decided we couldn’t possibly pass up dessert, so Phillip had a fancy chocolate pudding and I had a banana torte.  An excellent date night.

The weather that weekend was just perfect so on Saturday afternoon, we headed to the Cooper River Bridge to check another item off of our Charleston to-do list.  It was a 5-6 mile walk round-trip, so we definitely got our exercise in.  IMAG0108

On Sunday, we went to North Charleston to use our Groupon for the Hunley Museum.  The exhibit was fascinating.  It’s hard to imagine eight men huddled in this tiny tube, hand-cranking the propeller on a Civil War-era submarine.  JBD_7215 JBD_7216 JBD_7217 JBD_7220 JBD_7218 JBD_7223

Unfortunately, we weren’t allowed to take any pictures of the submarine itself since it is still in the restoration and conservation phase.  It remains submerged in a tank in the warehouse while the years of salty build-up are removed.  Once it has been cleaned, it will be able to be displayed outside the tank, but if it were to sit in the open air as it is now, it would basically disintegrate in short order.

Another check off our list!  And, as an added bonus, we got to check out the creepiest abandoned naval base you’ve ever seen.  All part of the random fun that is Charleston.

Charleston Cooks!

And so do we!  Several weeks ago, our new, fun friend Ashley invited me to join her at Charleston Cooks! (the local cooking store that offers demonstration and participation classes) for their Bourbon and BBQ class.  This was something on my list of must-dos, so I immediately signed up to go.  As the class got closer, Phillip’s interest was piqued and he decided to tag along as well.  The three of us had such a good time!  There were 13 people in the class and we divided into small groups to tackle this delicious menu:

  • Smoked Bourbon and Coca-Cola Lacquered Quail
  • Grilled Cornbread and Butterbean Dressing
  • Hog Dusted BBQ Pulled Pork with Bourbon Peach Sauce
  • Bourbon BBQ Baked Beans with Bacon Crumble
  • Bourbon Banana Pudding Parfaits with Burnt Caramel Sauce
  • Classic Old Fashioned Cocktails

The instructor had already measured all of the ingredients and set up the cooking stations, so all we had to do was follow the recipe.  Ashley and I went for the dessert, while Phillip and a classmate worked on the quail.  Here are some action shots (pardon the cell phone quality):IMAG0083

Crockpot Cheese Tortellini

We got a late start on the March Sweet as Pie menu, but better late than never, right?  First up was an easy weeknight meal, Crockpot Cheese Tortellini.  Now, this wasn’t a “start it in the morning and it’s finished by supper” kind of crockpot meal since it only needed about 4 hours of cooking time, but it was still convenient.  Here’s how it came together:

First, let me just say this:  Crockpot liners are the best. thing. ever.  Trust me.  They make you not hate cooking in your crockpot.  So, start with a crockpot liner and brown some sausage.  I used ground Italian sausage because I thought it would match the flavors in the recipe better than breakfast sausage.  I’m sure other types of sausage would work too though.JBD_7231 While the sausage browns, pour in a bag of frozen cheese tortellini.JBD_7229

Then add two cans of drained, diced Italian-style tomatoes and four cups of chicken broth.JBD_7234

Next, cube a package of cream cheese.JBD_7236

Finally, add in some spinach and mix it all up.  Then, just cook the mixture on low for four hours.  JBD_7241JBD_7245

I did add some salt at the end, but otherwise didn’t make any other changes.  This was more like a tortellini soup and less like a pasta dish, but still very filling.  We both enjoyed it for supper that night and the leftovers have also been good.  I wouldn’t be opposed to making this one again sometime – I might even try a different tortellini flavor like mushroom.  Overall, a solid weeknight meal!

Phillip Friday

Phillip was a little down heading into the weekend since he knew he had to start a month of night shifts on Sunday.  I couldn’t work his shifts for him, but I could make some of his favorites on Friday night.  I decided to have a second go at Chicken & Broccoli Crepes, a recipe from the Garland House cookbook (one of his favorite restaurants from home, although it is no longer open).  I was intimidated at first by making my own crepes, but they aren’t really all that difficult – just time-consuming.

I’d cooked some chicken earlier in the day.  Phillip cubed it and also chopped some steamed broccoli while I made the cheese sauce.

We have this ritual we go through on the weekends, which goes something like this:

Me:  I’m making the grocery list.  Is there anything in particular you want this week?
Phillip:  No, I don’t think so.
Me:  Are you sure?  No requests?
Phillip:  Nope.

And so it goes every week.  But once, quite unexpectedly, he asked me when I was going to make him a Key Lime Pie.  Well, it was finally pie-making day.  So, I consulted my trusty America’s Test Kitchens cookbook, got real key limes, and set to work.  It was actually a relatively easy pie to make.

First I made a graham cracker crust.  I love graham cracker crusts, especially homemade ones.  I think they are the best kind and they always remind me of cooking with my grandmother.  She has this old grinder with a crank that she uses to make graham cracker crumbs that have just the right texture – not too fine and with just enough chunky pieces to make it interesting.  Grandmother would let me make mounds and mounds of graham cracker crumbs and then we would pull out all sorts of tiny little bowls and make tiny graham cracker crust after tiny graham cracker crust.  We didn’t put anything in them, we just made the crusts and ate them together.  It’s funny how you still think about these things years later when you’re patting graham crackers into a pie plate.  It’s the little things.

Then, after zesting a few, I squeezed a whole bunch of limes (they are tiny!) for fresh juice.JBD_7076 JBD_7082

The juice and the zest were mixed with some egg yolks and a can of Eagle Brand to make the filling.  JBD_7086 JBD_7087 JBD_7090

I baked it for just a few minutes, let it cool, and then put it in the fridge to chill.JBD_7103

Just before we were ready to cut the first slice, I made some fresh whipped cream to top it with.  The recipe said to apply the whipped cream “attractively”, but who has time to figure out what that means?  I just spread it evenly over the top.  It was pretty enough for us.JBD_7210

Last Friday, Phillip took a break from lamenting his upcoming month-long stint on night float and suggested we drive out to Kiawah to check out this year’s HGTV Dream Home.  I’d barely left the house all week (you know, since I eat, drink, sleep, work, and generally live exclusively in this space), so I readily agreed.

My favorite parts were the blue striped chair and all of the lounge-y areas and their furnishings.  Phillip liked the decks/outdoor space best I think, and did not care at all for the bunk space.  In the end, we decided that we really like our house.  : )  Despite the fact that the dream home was so totally in my colors, we didn’t really like the layout and were in fact kind of underwhelmed by the space.  And there’s no way my stuff would ever fit in that kitchen.  I mean, if someone wanted to give us a fully furnished house on Kiawah, we wouldn’t turn it down or anything, but we are just generally pleased with the space we have in our own dream home.

Easy Pasta Carbonara

The final recipe on this month’s menu was Easy Pasta Carbonara, a Pampered Chef recipe chosen by my cousin Katie.  This was another easy fix that would be good for any weeknight meal.  Here’s how it came together:

First, I cooked some diced bacon.  I was supposed to use turkey bacon, but I already had regular bacon so I used that instead.  Then, instead of leaving the bacon in the skillet to cook with the rest of the dish, I removed it to a plate to add in later.  I really wanted a little crisp element.JBD_7053

I sauteed an onion, four cloves of garlic, and some crushed red pepper before adding in bowtie pasta, chicken stock, and a can of evaporated milk.  Gotta love the one pot meals.JBD_7057 JBD_7062 JBD_7064

This simmered, covered, until the pasta was done and then I stirred in some cream cheese, parmesan cheese, and peas (gasp!).  Finally, I sprinkled the bacon on top.  Done!  JBD_7072 JBD_7074

This was a solid recipe – we weren’t blown away but it was still pretty good.  And I think it was actually better as leftovers.  I wouldn’t be opposed to making this again, but with so many recipes in line to be tried, I doubt we’ll make it back to this one.

Cards Girls (and Delicious Healthy Pizza)

My friend Amber and I hosted this month’s Cardiology Girls Night Out.  I love this group.  It’s all of the spouses/significant others of the male cardiology fellows and all of the female cardiology fellows.  We get together once a month for dinner or another activity and always have a lot of fun.

Amber and I settled on a wine, cheese, and chocolate casual get-together for our turn.  We had it at our house and I was really excited to finally break out some of the serving pieces we received as wedding gifts.  We fired up the chocolate fountain and enjoyed a selection of cheeses, fruits, and fun chocolate dippers (like marshmallows and graham crackers and Nutter Butters).JBD_7046

I also used this opportunity to try out the next recipe on this month’s Sweet as Pie list, Delicious Healthy Pizza, a Pinterest find chosen by Kristin.  As with all vegetarian recipes, I was a little skeptical, but I liked all of the ingredients so I was willing to give it a try.  I’m happy to say it was a hit!  And definitely easy enough to whip up on party day.  Here’s how it came together:

First I diced an onion, some garlic, and some tomatoes, and then sliced some green onion (I skipped the leek and used green onions instead).  JBD_7025

Then I sauteed the whole mixture, adding some salt, pepper, a little bit of oregano, basil, and some lemon juice.JBD_7029

I prepared the portobello caps on a greased pan and then spooned the mixture into each cap.  These little pizzas were topped with some shaved parmesan and went into the oven for about 12 minutes.JBD_7032 JBD_7039 JBD_7043

Since I was serving these at the party, I cut them into quarters.  In retrospect, I should have seeded the tomatoes since there was quite a bit of liquid.  Regardless though, these were easy to make and pretty yummy.  I’d be up for trying them again sometime.  A successful recipe for a successful party!

Chocolate Raspberry Cobbler

The Sweet as Pie bonus recipe for the month was a simple Chocolate Raspberry Cobbler from Betty Crocker.  We decided to save this festive dessert for Valentine’s Day.  It was so easy to put together and pretty yummy too.  Here’s how it came together:

The recipe only called for three ingredients – a can of raspberry pie filling, a package of chocolate chunk cookie mix, and some melted butter.  First, I spread the pie filling in an 11×7 pan.JBD_7002 JBD_7006Then I sprinkled the dry cookie mix evenly over the filling.JBD_7009 JBD_7011

That was it!  I let it cool for just a few minutes before spooning into bowls alongside some vanilla frozen yogurt.  Delicious Valentine’s Day dessert (and good reheated over the next several days, too)!
