Shrimp (Scallop) Scampi

Tonight, we wanted to celebrate the Big Game with something special for dinner so we made Shrimp (Scallop) Scampi, the next of our January Sweet as Pie picks.  Well, actually, the dinner choice had less to do with the National Championship game and more to do with the fact that shrimp were on sale at Publix this week.  But nevertheless, we made it tonight for the two of us and for our friend Bobby who was over to watch the game.  Phillip loves seafood, and I’ll eat almost anything that involves fresh lemon juice, so we had high expectations for this dish.  Despite this love of seafood, Phillip doesn’t care for shrimp, so I made the recipe with half shrimp and half scallops.

I added the scallops before the shrimp to give them a little extra time to cook through.

And in goes the fresh lemon juice. Two whole, glorious lemons!

I thought the sauce looked a little thin, but once I mixed in the pasta, it was just right.

The final stir-in, since I neglected to purchase fresh parsley to cap off the dish.

A little garlic toast to round out this quick weeknight meal.

Despite a little confusion on when to add butter and how much, the recipe was pretty easy to make and both boys went back for seconds.  We’ll be making it again I think and I may even remember to get the fresh herbs next time!  Another good pick from Sweet as Pie!
