With Charleston right there in the name, we had to try this hot dip. We ended up sharing it with friends who came over for a fish fry one night and everyone really enjoyed it. It was easy to make and could be made ahead of time (which is the perfect attribute for party food). Here’s how it came together:
I mixed together cream cheese, mayo, cheddar cheese, monterey jack cheese, green onions, and a little cayenne pepper. I spread the mixture in a small baking dish and covered the top with crushed Ritz crackers. After baking, I sprinkled on crumbled bacon. We served the dip with crackers and pita chips. It was a hit! Our guests enjoyed the dip and especially got a kick out of the name. The leftovers also reheated fairly well. A great addition to a party table!
